BBQ Baby Back Ribs
This is a great way to make ribs. The boiling cooks the meat, removes much of the fat, and tenderizes it as well. It also prevents you from standing over the grill for two hours like other recipes.
Ingredients:
About 2 pounds baby back ribs or other similar cut of your choice
Season salt, such as Lowry's
Other herbs as you see fit, such as rosemary, bay leaf, oregano
BBQ Sauce:
1 1/2 to 2 cups of your favorite BBQ sauce
1/4 cup additive of your choice, such as beer, bourbon, whiskey, Pepsi, etc.
Preparation:
The night before you want to cook the ribs, cut the ribs into manageable pieces and place in a large stew pot.
Fill the pot with water just to cover the ribs; add the season salt and any other herbs you have
chosen. Cover and place the pot over a high heat to get the water boiling, then reduce heat to
simmer. Allow the ribs to simmer over this low heat for about 2 hours, adding water if necessary.
While the ribs are boiling, mix up your favorite BBQ sauce (or open the bottle of your favorite
from the store). Add the additive of your choice and stir together.
Remove the ribs from the water and pat dry with paper towels. Put the ribs into a container that
can contain them and the marinade (I use a large zip lock bag). Put the dry ribs into the
container with the BBQ sauce, and coat the ribs. Allow to marinate overnight in the refrigerator
or at least a few hours if you forgot to start them early. The marinate time is just to allow the
flavors to seep into the meat. If you don't marinate at all, the ribs will still be great, just
serve extra sauce.
Cooking:
When you are ready to cook the ribs, prepare your grill to a medium heat. Remove the ribs from
the marinade container and place on the hot grill. Put the rest of the marinade in a saucepan and
bring to a boil. (This step is necessary if you want to reuse the marinade. Boiling will kill
any organisms that might have contaminated the meat and sauce. NEVER FORGET THIS STEP!) Grill
the ribs, coating with extra sauce and turning after about 4 - 5 minutes, until they are slightly
charred and warm throughout (8 - 12 minutes total is all that is necessary). Remove from grill
when done and serve with warm sauce.
Oven Method:
Prepare as above, but preheat broiler of oven. Put the marinated ribs on a foil covered cookie
sheet or oven rack and broil about 2-3 inches below the broiler. Turn after about 3-4 minutes.
Keep an eye on them so they don't burn.
Note: Plan for 1 pound ribs and 1/2 cup sauce per person for larger groups. Play with the sauce to find your favorite combination. Enjoy your grill!
