The Brickyard Barn Inn's
Simple Chicken A La King
(Makes about 3 servings)
Ingredients:
1/2 cup diced fresh mushrooms
1/3 cup chopped green pepper
2 tablespoons margarine or butter
4 teaspoons flour
1/4 teaspoon salt
1 cup half & half (or substitute something lower in fat like whole or 2% milk)
1 1/2 cups chopped cooked chicken (or substitute turkey, crab or shrimp)
1 tablespoon sliced pimiento (or diced tomato, red pepper, yellow pepper, etc.)
1 tablespoon dry sherry (or use white wine, chicken broth, or water)
1 teaspoon lemon juice
1/4 teaspoon paprika
3 English muffins, split and toasted (or use French bread, regular bread, or biscuits)
Directions:
In a saucepan melt the butter, then sauté the mushrooms and green pepper until just tender. Stir in the flour and salt. Add the milk all at once. Cook and stir until thickened and bubbly. Add the remaining ingredients and cook until heated through. Serve over the English muffins.
Options: 1) Use leftover vegetables in the dish such as broccoli, peas, carrots, etc. Don't sauté them if they are all ready cooked and soft. 2) Lower fat milks can be substituted. 3) Leave the meat out for a vegetarian meal. 3) Spice up the dish by adding other herbs and spices such as garlic, cayenne pepper, or oregano.
