Fillet of Fish Veronique
(Makes 6-8 Servings)

This is a recipe concept that I found then revised right after the news reported (again) on the benefits of a diet including saltwater fish. Using the ingredients below will create a great fish dish with benefits, but lots of calories as well. If you use lowfat versions of the ingredients, you can get even more benefit. Garnish your plates with more grapes. Healthy eating!

Ingredients:
   4 Tablespoons butter or olive oil
   1/2 pound sliced mushrooms
   48 seedless red grapes, halved
   1 cup sour cream
   1 cup mayonnaise
   Juice of one lemon
   8 filets of saltwater fish, such as halibut, roughy, sole, or salmon

Directions:
Preheat oven to 350 degrees. In a large skillet saute the mushrooms in the butter until soft. Remove from heat and stir in the grape halves, sour cream, mayonnaise, and the juice. Mix well. Arrange the fillets in a lightly greased shallow baking dish and pour the sauce over the fish. Bake for about 30 minutes or until the fish flakes easily when tested with a fork.
