Scott's Best Irish Soda Bread
Ingredients:
Directions: 2) Mix the flour, sugar, baking powder, salt, and baking soda. Mix the eggs and sour cream in a small bowl, then add to the flour mixture. Stir well or beat on low speed just till combined. Note: dough will be sticky and you may need to knead a little bit on a floured surface if not using an electric mixer. Stir (or knead) in the dried fruit. Distribute batter evenly between the two pans. 3) Bake loaves at 325 degrees F (165 degrees C) for 1 hour. Test with a toothpick. You may desire to top the loaves with a powdered sugar and milk glaze. |
