Scott's Best Irish Soda Bread
(Makes 2 - 8x4 inch loaves)

Ingredients:
   4 cups all-purpose flour (stir flour in container, then spoon into measuring cup)
   1 cup white sugar
   2 teaspoons baking powder
   1/2 teaspoon salt
   1 teaspoon baking soda
   3 eggs (beaten)
   1 pint sour cream
   1 1/2 cups raisins, currants, dried cranberries (or mixture)

Directions:
1) Preheat oven to 325 degrees F (165 degrees C). Grease two 8x4 inch loaf pans.

2) Mix the flour, sugar, baking powder, salt, and baking soda. Mix the eggs and sour cream in a small bowl, then add to the flour mixture. Stir well or beat on low speed just till combined. Note: dough will be sticky and you may need to knead a little bit on a floured surface if not using an electric mixer. Stir (or knead) in the dried fruit. Distribute batter evenly between the two pans.

3) Bake loaves at 325 degrees F (165 degrees C) for 1 hour. Test with a toothpick. You may desire to top the loaves with a powdered sugar and milk glaze.
