Scott's Pumpkin Seeds Soak the seeds from pumpkin(s) in a solution of 1 part salt to 3 parts water (such as 1/3 cup salt to 1 cup water). Soak at least two hours or overnight. Strain the seeds onto foil lined cookie sheets. Seeds should be in one layer only. Pour some of the brine onto the cookie sheets to make a layer of liquid about 1/16 inch deep. Bake in 250 degree oven for about 2-3 hours. Stir occasionally while baking. Watch often. Seeds are done when liquid is gone and seeds are dry and slightly crisp. Notes: You may add some spices to the brine such as soy sauce, sugar, pepper, cayenne pepper, or Worchestershire sauce. You might even toss some seasoning on the wet, baking seeds such as dry pesto seasoning or dry ranch dressing. Again, stir occasionally to distribute the seasons.
